I confess! I’m Vicki, and I’m a foodie!

It’s after 3 a.m. on an early Saturday morning and my thermos of coffee is doing little to quiet the hunger pangs in my belly, so I figured this is a great time for a post of foods I’m craving right now.

Well, you know; if you can’t beat ’em … ๐Ÿ™‚

Yep! I’m a foodie – a 55-year-old foodie who could bathe in melted cheese and loves all foods meatless. I literally sit here at work and daydream about what food I’m gonna eat when I get off in the mornings. Before I started this post I was making a grocery and wine list. (I’m thinking this might be a homemade sangria weekend). My belly growled so loud a minute ago that it drowned out my patient’s snoring for a minute. But because I don’t want my butt spreading to another time zone, I refuse to eat at night anymore since that’s when I do most of my sitting. So, for about four more hours, my daydreams are gonna have to sustain me.


Watermelon! My absolute FAVORITE summer fruit. This will definitely be my breakfast this morning. And come to think of it, there’s a recipe I recall seeing that had an upside vodka bottle poking out of a watermelon. Is that how you make vodka-infused watermelon? Cool! (Adding vodka to my list)

Aren’t these beets gorgeous? I don’t know why it took me so long to buy raw beets and cook them myself instead of the canned version. I love beets in by themselves or in my salads. Speaking of which …

I love salads! Not as diet food – no way. I refuse to diet. I just end up over-eating the foods that I gave up and dreamed about while I was dieting. Foolishness! I usually eat a salad every day. This one doesn’t have much but a raisin/coconut flake/beet/ cabbage/spinach/tomato/carrot/cuke and crouton salad is right up my alley. ๐Ÿ™‚

Ohhh myyyy! My belly just growled into overdrive! My homemade veggie pizza from leftover challah dough. I won’t make this during the summer unless my grandchildren are over because well, I don’t have a stop button when it comes to anything cheesy. I like to use the summer months to wean my body from the carbs I love so much.

Now these are broccoli balls. Ever tried them? They’re pretty easy to make and they give you a fresh way to eat broccoli if you are bored with looking at little green trees on your plate. ๐Ÿ™‚ Wanna try? There are a lot of variations but here’s one to get your feet wet. Enjoy!



Now as far as melted cheese goes, if it’s not on pizza, these have to be my all-time faves: broccoli with melted cheese, and my home-made black bean burgers with melted cheese. Doesn’t matter whether it’s vegan or dairy cheese – or a combination of both. Dee-lish!


Well, so much for daydreaming. In about three hours it’ll be 8 a.m. and I’ll be getting off work. Cocktail time! Okay don’t judge us nightshift workers. ๐Ÿ™‚ Whether you are getting off work or going in, have an awesome day! And a better one tomorrow!
