Noodled Sweet Potato Medley

Let’s face it. If you’re like me and spending time dreaming up recipes is the very last thing you want to spend your precious time doing, meal times can get monotonous. Of course, I don’t always have a problem with that. But it’s always fun to find something new to do with an old favorite.

Take sweet potatoes. They’re delicious boiled, peeled and mashed with butter and cinnamon right? Then there’s the option of peeling, slicing and pan frying for a twist on my Dad’s fried potatoes using white potatoes. You can also bake them with sugar and spices for a delicious treat. But then what?

I never ONCE thought of taking a knife and spiraling the potatoes into thin, noodle-shaped ropes ’cause that’s just a little more kitchen work than 20160321_120507-1.jpgI feel like doing. But this little machine here made it so easy. After peeling the sweet potatoes, it took only a few more minutes to turn them into a curly string of noodles – perfect for stir-frying.

For an EZ anytime entree, feel free to toss together a few veggies with these noodled sweet potatoes and enjoy!

Noodled Sweet Potato Medley

Note: If you don’t have a spiral veggie slicer, here are a few to check out. 

Sweet Potatoes – 220160410_181207.jpg

Frozen bag of mixed veggies

Vegan chorizo (or your favorite sausage, chopped)

Onion – half, chopped

Your favorite seasonings – (rosemary garlic, Italian, and a teaspoon of Kosher Salt are the seasonings I used )

Preparation

Stir-fry onion and vegan (or meat) sausage together in pan sprayed with pan spray. Setwp-1460620760655.jpg aside.

On medium-high heat, stir-fry the noodled sweet potatoes in pan spray until tender; add frozen veggies and keep stirring, spraying pan spray again if necessary. Add sausage-onion combo, lower heat and cover for about five minutes.
